- 1/4 cup coconut flour
- 2 tablespoons psyllium husk powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 tablespoon apple cider vinegar
- 2 tablespoons melted butter (or coconut oil for dairy-free)
- 1/2 cup warm water
- Optional: sesame seeds, chopped chives, egg wash for topping
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, coconut flour, psyllium husk, baking powder, and salt.
- Add eggs, apple cider vinegar, melted butter, and warm water. Stir until a dough forms.
- Let dough rest for 3–5 minutes to allow psyllium to absorb moisture.
- With damp hands, divide dough into 6 equal portions. Shape into buns and place on baking sheet.
- Brush tops with egg wash if using. Sprinkle with sesame seeds or chopped chives.
- Bake for 30–35 minutes or until golden brown and firm to touch.
- Cool on a wire rack for at least 10–15 minutes before slicing.
