Ingredients

2 cups cooked shredded chicken

6 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 jalapeños, finely diced and seeded

6 slices bacon, cooked and crumbled

2 cloves garlic, minced

3 green onions, sliced

8 medium flour tortillas

1½ cups enchilada sauce

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. Cook and shred the chicken.

2. Cook bacon until crispy and crumble.

3. Sauté jalapeños and garlic in olive oil.

4. Mix chicken, cream cheese, cheeses, bacon, jalapeños, garlic, green onions, and seasoning.

5. Warm tortillas until pliable.

6. Fill tortillas, roll, and place in baking dish.

7. Cover with enchilada sauce and extra cheese.

8. Bake until bubbly and golden.

Notes

Soften cream cheese completely before mixing.

Adjust jalapeño heat to your preference.

Cover with foil initially for extra moisture, then uncover to brown.
