  • 12 oz bow tie pasta (farfalle)
  • 1 lb Italian sausage (sweet or hot, casings removed if using links)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 (28 oz) can crushed tomatoes
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Reserved pasta water (about 1/2 cup)

Instructions

  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook, breaking it apart, until browned and cooked through (about 6-8 minutes).

  3. Add chopped onion to the skillet and cook until softened, about 4 minutes. Stir in minced garlic and cook for 1 minute more.

  4. Pour in crushed tomatoes and add Italian seasoning, salt, and pepper. Stir well and let the sauce simmer for 10-15 minutes.

  5. Add the cooked bow tie pasta to the sauce, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

  6. Garnish with fresh parsley and Parmesan cheese. Serve hot and enjoy!
