- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 12 oz fully cooked sausage, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 2 tbsp honey
- 3 garlic cloves, minced
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or lightly grease.
- Peel and dice sweet potatoes into 1-inch cubes.
- Slice fully cooked sausage into 1/2-inch thick rounds.
- In a small bowl, whisk together olive oil, honey, garlic, Dijon mustard, salt, and pepper.
- Place sweet potatoes and sausage in a large bowl. Pour the honey garlic sauce over and toss to coat evenly.
- Spread mixture onto prepared sheet pan in a single layer.
- Roast for 25–30 minutes, stirring halfway through, until potatoes are tender and sausage is browned.
- Optionally broil for 2–3 minutes at the end for crispier edges.
- Remove from oven and garnish with fresh parsley before serving.
