  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups chocolate (milk, dark, or white)
  • 1 teaspoon coconut oil or shortening (optional, for smoother chocolate)
  • 1/4 cup chopped peanuts (optional, for garnish)



Instructions

  1. In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until well combined and a thick dough forms.
  2. Roll the mixture into small balls and place them on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  3. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. If needed, stir in coconut oil or shortening for a thinner consistency.
  4. Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring even coverage. Let the excess chocolate drip off.
  5. Place the coated balls back onto the parchment paper and sprinkle with chopped peanuts if desired.
  6. Allow the chocolate to set at room temperature or refrigerate for 15–20 minutes until firm.
  7. Serve and enjoy! Store leftovers in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
