Ingredients
Scale
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups chocolate (milk, dark, or white)
- 1 teaspoon coconut oil or shortening (optional, for smoother chocolate)
- 1/4 cup chopped peanuts (optional, for garnish)
Instructions
- In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until well combined and a thick dough forms.
- Roll the mixture into small balls and place them on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. If needed, stir in coconut oil or shortening for a thinner consistency.
- Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring even coverage. Let the excess chocolate drip off.
- Place the coated balls back onto the parchment paper and sprinkle with chopped peanuts if desired.
- Allow the chocolate to set at room temperature or refrigerate for 15–20 minutes until firm.
- Serve and enjoy! Store leftovers in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
