- 1 lb chicken thighs or breasts, cut into chunks
- 12 oz Andouille sausage, sliced
- 1 ½ cups long grain white rice (uncooked)
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, with juice
- 2 ½ cups chicken broth
- 1 ½ tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- Sliced green onions, for garnish
Instructions
- Set Instant Pot to Sauté. Add olive oil and brown the sausage slices for about 3–4 minutes. Remove and set aside.
- Add chicken chunks, season lightly, and sear until browned. Remove and set aside with the sausage.
- Sauté onion, celery, and bell pepper until softened (3–4 minutes). Add garlic and cook another 30 seconds.
- Deglaze the pot with a splash of broth, scraping up brown bits.
- Stir in diced tomatoes, Cajun seasoning, and return sausage and chicken to the pot.
- Add rice and pour in the remaining broth. Stir gently to combine without overmixing.
- Seal the lid and set to High Pressure for 7 minutes. Allow 5 minutes natural release, then quick release remaining pressure.
- Fluff rice gently, garnish with green onions, and serve hot.
