  • 4 cups broccoli florets (washed and dried)
  • 2 Honeycrisp apples, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cooked bacon, crumbled
  • 1/3 cup toasted sunflower seeds
  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Cut broccoli into bite-sized florets. Blanch for 30 seconds (optional), then cool and dry.
  2. Slice apples and red onion thinly.
  3. Cook bacon until crispy, then crumble.
  4. Toast sunflower seeds in a dry skillet for 2–3 minutes.
  5. Whisk together mayonnaise, Greek yogurt, vinegar, honey, salt, and pepper to make the dressing.
  6. In a large bowl, combine broccoli, apples, onion, bacon, and sunflower seeds.
  7. Pour dressing over the salad and toss to coat evenly.
  8. Chill in refrigerator for at least 30 minutes before serving.
