- 4 cups broccoli florets (washed and dried)
- 2 Honeycrisp apples, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup cooked bacon, crumbled
- 1/3 cup toasted sunflower seeds
- 1/3 cup mayonnaise
- 1/3 cup Greek yogurt
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Cut broccoli into bite-sized florets. Blanch for 30 seconds (optional), then cool and dry.
- Slice apples and red onion thinly.
- Cook bacon until crispy, then crumble.
- Toast sunflower seeds in a dry skillet for 2–3 minutes.
- Whisk together mayonnaise, Greek yogurt, vinegar, honey, salt, and pepper to make the dressing.
- In a large bowl, combine broccoli, apples, onion, bacon, and sunflower seeds.
- Pour dressing over the salad and toss to coat evenly.
- Chill in refrigerator for at least 30 minutes before serving.
