Ingredients

1 and 1/2 cups (360ml) heavy cream, half-and-half, or whole milk

2 heaping tablespoons (about 35g) pumpkin puree

2 tablespoons (30ml) pure maple syrup, or to taste

1 and 1/2 teaspoons pumpkin pie spice

2 cinnamon sticks


Instructions

  1. In a small saucepan over medium heat, whisk together the heavy cream (or chosen dairy), pumpkin puree, maple syrup, and pumpkin pie spice until combined.
  2. Add the cinnamon sticks, then increase heat to medium-high. Bring the mixture to a boil, whisking occasionally, and let it boil for 1 minute.
  3. Remove from heat and let the creamer cool in the pan for about 5 minutes. If the mixture appears separated, pour it through a fine-mesh sieve to ensure a smooth texture.
  4. Use the creamer right away in your coffee, or transfer it to a tightly sealed jar (removing the cinnamon sticks) and store in the refrigerator for up to 1 week. Shake well before each use.

Notes

  • This creamer is lightly sweetened, so you may add more maple syrup or sugar to your coffee if desired.
