- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup chopped pecans (toasted)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the vanilla extract and salt, and mix until combined.
- Gradually add the flour, mixing just until the dough forms.
- Fold in the toasted chopped pecans evenly.
- Roll dough into 1-tablespoon-sized balls, flatten slightly, and place on the prepared baking sheet.
- Optional: Press a whole pecan into the center of each cookie.
- Bake for 12–15 minutes, or until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
