Ingredients

Scale
  • 2 cups rotini pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into bite-sized strips
  • 1 packet Hidden Valley Ranch Seasoning Mix (or about 2 tablespoons)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, finely chopped (optional for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook rotini pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken strips, season with salt, pepper, and half the ranch seasoning. Cook until golden and cooked through, about 5–7 minutes. Set aside.
  3. Prepare the Sauce: Lower heat to medium. In the same skillet, add heavy cream and chicken broth. Stir in remaining ranch seasoning and Parmesan cheese. Simmer gently for 3–4 minutes until creamy.
  4. Combine Everything: Add the cooked pasta and chicken to the skillet. Toss to coat. If needed, add reserved pasta water a little at a time to adjust sauce consistency.
  5. Garnish and Serve: Turn off the heat, sprinkle with fresh parsley, and serve immediately with extra Parmesan if desired.
