Description

Ingredients

1 ½ lbs boneless skinless chicken breasts, cut into bite-size pieces

1 tbsp olive oil

1 tsp garlic powder

1 tsp dried Italian herbs (oregano, thyme, basil)

½ tsp smoked paprika

1 tsp kosher salt

½ tsp black pepper

2 tbsp unsalted butter

4 cloves garlic, minced

1 cup heavy cream (room temperature)

1 cup crumbled feta cheese (room temperature)

½ cup freshly grated Parmesan cheese

1 ½ tsp truffle oil (adjust to taste)

2 medium leeks, thinly sliced into rings

1 tbsp olive oil (for leeks)

¼ cup finely grated Parmesan (for leeks)

1 pinch kosher salt (for leeks)

1 pinch black pepper (for leeks)

12 oz fettuccine, cooked al dente (optional)

1 tbsp chopped fresh parsley or thyme (for garnish)

4 lemon wedges (optional)


Instructions

1. Season chicken with olive oil, garlic powder, Italian herbs, smoked paprika, salt, and pepper; sear 3–4 minutes per side until cooked through.

2. Heat oven to 400°F (200°C). Toss leeks with olive oil, Parmesan, salt, and pepper on a lined sheet; roast 12–15 minutes, stirring once, until crisp.

3. In a saucepan melt butter; sauté garlic 1–2 minutes. Add cream, then whisk in feta until smooth; add Parmesan to thicken.

4. Stir in truffle oil to taste. Return chicken and sauce to the skillet; warm 1–2 minutes.

5. Serve over fettuccine if using; top with crispy leeks, herbs, and a squeeze of lemon.

Notes

Use freshly grated Parmesan for best melt and crisp.

Lighten by swapping ½ cup cream for whole milk and simmering gently.

Add truffle oil at the end to preserve aroma.
