12 lasagna noodles (oven-ready or boiled)

1 lb ground beef (80/20 blend preferred)

1 medium yellow onion, finely chopped

3 cloves garlic, minced

2 tbsp tomato paste

28 oz crushed tomatoes

1 tbsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

15 oz ricotta cheese

1 large egg

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)


Instructions

1. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add garlic and cook for another minute.

2. Add ground beef to the skillet and cook until browned. Drain excess fat. Stir in tomato paste, crushed tomatoes, Italian seasoning, salt, and pepper. Simmer uncovered for 25–30 minutes.

3. In a bowl, mix ricotta cheese, egg, and a pinch of salt until smooth.

4. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

5. Spread a thin layer of meat sauce in the bottom. Layer noodles, ricotta, meat sauce, mozzarella, and Parmesan. Repeat layers, ending with sauce and cheese on top.

6. Cover with foil (sprayed to prevent sticking) and bake for 25 minutes. Remove foil and bake another 20–25 minutes until bubbly and golden.

7. Let rest for at least 15 minutes before slicing. Garnish with parsley and serve.

Notes

Make sure your meat sauce is thick before layering to avoid watery lasagna.
