Ingredients
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
12 oz rotini pasta
2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped chives or parsley (optional for garnish)
Instructions
1. Preheat oven to 350°F (175°C).
2. Cook pasta in salted boiling water until al dente. Drain and set aside.
3. In a skillet, brown ground beef over medium heat until fully cooked. Drain excess fat.
4. Add diced onion to the skillet and cook until translucent. Stir in garlic and cook for 1 more minute.
5. Add tomato sauce, cream of mushroom soup, and sour cream. Stir well and let it simmer for 5–7 minutes. Season with salt and pepper.
6. In a large bowl, combine the cooked pasta with the beef and sauce mixture.
7. Transfer everything into a greased 9×13-inch baking dish.
8. Top evenly with shredded cheddar cheese.
9. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes until cheese is golden.
10. Let it cool for 5–10 minutes before serving. Garnish with chopped chives or parsley if desired.
Notes
For the best texture, slightly undercook the pasta before baking.
You can prepare the casserole in advance and bake it later — just store it covered in the fridge.
