  • 1 lb boneless, skinless chicken breasts
  • 3/4 cup uncooked long-grain white rice
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley (or 1 tbsp fresh parsley, chopped)
  • Salt and black pepper, to taste
  • Juice of 1/2 lemon (optional)
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large stockpot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5-6 minutes until softened.
  3. Stir in garlic, thyme, salt, and pepper. Cook 1-2 minutes until fragrant.
  4. Add chicken breasts and pour in chicken broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, covered.
  6. Remove chicken, shred it with forks, then return to the pot.
  7. Add rice and simmer uncovered for 15-18 minutes until rice is tender.
  8. Adjust seasoning. Stir in lemon juice and parsley just before serving.
