  • ½ cup diced carrots
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini pasta until al dente, about 8-10 minutes. Drain and rinse with cold water.

  2. Prep the Ingredients: Dice the ham, pineapple, red onion, and carrots into small pieces.

  3. Make the Dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.

  4. Combine: In a large mixing bowl, combine the cooled pasta, diced ham, pineapple, red onion, and carrots. Pour the dressing over and toss until everything is evenly coated.
