A healthy, hearty, and flavorful one-pan meal, the Ground Turkey Sweet Potato Skillet is packed with lean protein, naturally sweet roasted potatoes, and aromatic herbs and spices. It’s quick enough for a weeknight dinner and perfect for meal prep.

- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Peel and dice sweet potatoes into small cubes.
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add sweet potatoes, season with salt and pepper, and sauté for 10–12 minutes until tender and golden. Remove and set aside.
- In the same skillet, heat another tbsp olive oil if needed. Add diced onion and cook for 3–4 minutes until translucent.
- Add minced garlic and cook for 30 seconds.
- Add ground turkey. Break it apart, season with paprika, salt, and pepper, and cook for 6–8 minutes until browned and fully cooked.
- Return sweet potatoes to the skillet and stir to combine. Let cook for another 2–3 minutes.
- Turn off heat, garnish with fresh parsley, and serve hot.
