Description

A healthy, hearty, and flavorful one-pan meal, the Ground Turkey Sweet Potato Skillet is packed with lean protein, naturally sweet roasted potatoes, and aromatic herbs and spices. It’s quick enough for a weeknight dinner and perfect for meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Peel and dice sweet potatoes into small cubes.
  2. Heat 1 tbsp olive oil in a large skillet over medium heat.
  3. Add sweet potatoes, season with salt and pepper, and sauté for 10–12 minutes until tender and golden. Remove and set aside.
  4. In the same skillet, heat another tbsp olive oil if needed. Add diced onion and cook for 3–4 minutes until translucent.
  5. Add minced garlic and cook for 30 seconds.
  6. Add ground turkey. Break it apart, season with paprika, salt, and pepper, and cook for 6–8 minutes until browned and fully cooked.
  7. Return sweet potatoes to the skillet and stir to combine. Let cook for another 2–3 minutes.
  8. Turn off heat, garnish with fresh parsley, and serve hot.
