Ingredients
1 pound ground beef
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup diced bell peppers (any color)
1/2 cup Greek yogurt
Fresh cilantro, chopped (optional)
Instructions
1. Preheat the oven to 425°F (220°C).
2. Toss cubed sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet.
3. Roast sweet potatoes for 25 minutes, flipping halfway through until golden and tender.
4. While potatoes roast, heat a skillet over medium-high heat.
5. Add ground beef, season with garlic powder, salt, pepper, chili powder, and cumin. Cook for 8–10 minutes until browned. Drain excess fat if needed.
6. In the same or a separate pan, sauté diced bell peppers in a little oil for 5–6 minutes until just tender.
7. Once everything is cooked, assemble bowls with sweet potatoes, ground beef, and bell peppers.
8. Top with a dollop of Greek yogurt and a sprinkle of chopped cilantro if using.
