Description

Ingredients

1 tablespoon olive oil

1 pound lean ground beef

1 small yellow onion, diced

2 cloves garlic, minced

10.5 ounces cream of mushroom soup

1 cup beef broth

1 cup sour cream

8 ounces egg noodles

0.5 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.

3. Push the beef to one side of the skillet. Add diced onion and sauté until soft, about 3-4 minutes. Stir in minced garlic and cook for 30 seconds.

4. Mix the beef, onion, and garlic together. Pour in beef broth and stir in cream of mushroom soup. Simmer for 5-7 minutes until the sauce thickens.

5. Reduce heat to low. Stir in the sour cream until fully incorporated. Do not boil.

6. Add the cooked noodles into the skillet. Toss to coat in the sauce. Let it simmer for another 2-3 minutes.

7. Garnish with chopped parsley and serve immediately.

Notes

Always stir in the sour cream over low heat to prevent curdling.

You can swap out the cream of mushroom soup for a homemade roux if preferred.

Leftovers reheat best with a splash of milk or broth to refresh the sauce.
