  • 1 lb large or jumbo shrimp, peeled and deveined
  • 1 bunch of asparagus, trimmed
  • 2 tbsp olive oil (divided)
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 1/2 cup Greek yogurt or sour cream
  • 1 garlic clove, finely minced
  • 1 tbsp lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. In a bowl, toss shrimp with 1 tbsp olive oil, paprika, salt, and pepper. Let marinate for 10–15 minutes.
  2. In a small bowl, mix Greek yogurt (or sour cream), garlic, lemon juice, 1 tbsp olive oil, salt, and pepper to taste. Stir until smooth and chill in the fridge.
  3. Toss trimmed asparagus with olive oil, salt, and pepper. Grill or sauté for 4–5 minutes until tender with a slight char.
  4. Grill shrimp over medium-high heat for 2–3 minutes per side, or until pink and opaque.
  5. To assemble, spread a spoonful of garlic sauce into the bottom of each bowl. Add shrimp and asparagus on top.
  6. Garnish with chopped parsley and extra black pepper, if desired.
