1 whole fresh pineapple

2 tablespoons brown sugar (optional)

1 tablespoon melted butter or coconut oil (optional)

½ teaspoon ground cinnamon or chili powder (optional)

2 scoops vanilla ice cream (for serving)

46 fresh mint leaves (for garnish)


Instructions

1. Slice off the top and bottom of the pineapple. Stand it upright and trim away the skin.

2. Cut the pineapple into ½ to ¾ inch thick rings or spears. If making rings, remove the core.

3. In a small bowl, mix brown sugar with melted butter or coconut oil. Brush both sides of each pineapple slice.

4. Sprinkle with cinnamon or chili powder if using.

5. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.

6. Grill pineapple for 3–4 minutes per side until grill marks appear and edges caramelize.

7. Remove from heat and serve warm with a scoop of vanilla ice cream and mint garnish.

8. Enjoy immediately, or refrigerate leftovers for up to 3 days.

Notes

Use a ripe but firm pineapple to prevent the slices from breaking down on the grill.
