For the Chicken Skewers:
- 1½ pounds boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes
- 3 tablespoons olive oil
- Juice and zest of 2 lemons
- 3 garlic cloves, minced
- 1½ teaspoons dried oregano
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley (plus extra for garnish)
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- ½ cucumber, grated and drained
- 1 garlic clove, finely minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste
Optional for Serving:
- Lemon wedges
- Extra chopped parsley
- Warm pita or flatbread
Instructions
- In a large bowl, combine olive oil, lemon juice and zest, garlic, oregano, salt, pepper, and parsley. Add chicken cubes and coat evenly. Marinate for at least 1 hour, preferably overnight.
- For the tzatziki, grate the cucumber and squeeze out excess moisture. Mix with yogurt, garlic, lemon juice, olive oil, dill, and season to taste. Refrigerate until ready to use.
- Thread marinated chicken onto soaked wooden or metal skewers.
- Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has grill marks.
- Serve hot with a drizzle of tzatziki, fresh parsley, and lemon wedges. Add pita if desired.
