For the Chicken Skewers:

  • pounds boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes
  • 3 tablespoons olive oil
  • Juice and zest of 2 lemons
  • 3 garlic cloves, minced
  • 1½ teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley (plus extra for garnish)

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and drained
  • 1 garlic clove, finely minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Optional for Serving:

  • Lemon wedges
  • Extra chopped parsley
  • Warm pita or flatbread

Instructions

  1. In a large bowl, combine olive oil, lemon juice and zest, garlic, oregano, salt, pepper, and parsley. Add chicken cubes and coat evenly. Marinate for at least 1 hour, preferably overnight.
  2. For the tzatziki, grate the cucumber and squeeze out excess moisture. Mix with yogurt, garlic, lemon juice, olive oil, dill, and season to taste. Refrigerate until ready to use.
  3. Thread marinated chicken onto soaked wooden or metal skewers.
  4. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has grill marks.
  6. Serve hot with a drizzle of tzatziki, fresh parsley, and lemon wedges. Add pita if desired.
