Ingredients

Scale

2 boneless skinless chicken breasts

12 oz linguine

4 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic minced

1 cup heavy cream

1 cup freshly grated parmesan cheese

1 tablespoon chopped parsley

½ teaspoon red pepper flakes

Salt to taste

Black pepper to taste

Instructions

1. Cut chicken breasts into bite-sized pieces, pat dry, and season with salt, pepper, and red pepper flakes.

2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat.

3. Add chicken in a single layer and cook for 4–5 minutes on each side until golden and fully cooked. Remove and set aside.

4. Reduce heat to medium, add remaining butter to the skillet, then sauté garlic for 1 minute until fragrant.

5. Stir in heavy cream and scrape the bottom of the pan to deglaze.

6. Lower heat, then add parmesan cheese and stir until smooth and creamy.

7. Boil linguine in salted water until al dente, reserving ½ cup pasta water before draining.

8. Add pasta to the skillet with sauce and toss to coat. Add pasta water as needed to loosen the sauce.

9. Return chicken to the pan and toss everything together.

10. Serve hot, topped with parsley, extra parmesan, and a pinch of chili flakes if desired.

Notes

Use freshly grated parmesan for a smoother sauce—pre-shredded cheese doesn’t melt as well.

Don’t skip the reserved pasta water—it helps emulsify and bind the sauce to the noodles.

Avoid high heat while simmering the cream to prevent it from curdling or breaking.
