  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
For the Parmesan Mushroom Sauce:
  • 1 tablespoon butter
  • 8 oz mushrooms (sliced; cremini, button, or baby bella)
  • 2 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and black pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Chicken:
    • Pat the chicken breasts dry, then slice them in half horizontally or pound them to an even ½-inch thickness.
  2. Set Up the Breading Station:
    • Place the flour in one shallow bowl, beaten eggs in another, and a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper in a third.
  3. Bread the Chicken:
    • Dredge each chicken piece in flour, then dip into the beaten eggs, and finally coat with the Parmesan breadcrumb mixture, pressing gently to adhere.
  4. Cook the Chicken:
    • Heat olive oil and butter in a large skillet over medium heat. Add the breaded chicken and cook for 4-5 minutes per side, until golden brown and crispy. Transfer to a plate and set aside.
  5. Make the Parmesan Mushroom Sauce:
    • In the same skillet, melt butter and sauté the mushrooms for 5-6 minutes until golden brown. Add the garlic and cook for another 30 seconds.
