Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 yellow onion, diced
1 cup carrots, sliced
1 cup celery, chopped
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
2 cups cooked shredded chicken
1 pound potato gnocchi
1 cup heavy cream
2 cups fresh spinach
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/2 teaspoon Italian seasoning
Instructions
1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
2. Stir in garlic and cook for another 30 seconds until fragrant.
3. Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to form a roux.
4. Slowly pour in chicken broth while stirring to prevent lumps. Bring to a gentle simmer.
5. Add shredded chicken and gnocchi. Simmer for 5–7 minutes until gnocchi floats and is tender.
6. Reduce heat to low. Stir in heavy cream, spinach, thyme, Italian seasoning, salt, and pepper. Simmer 2–3 minutes until spinach wilts.
7. Taste and adjust seasoning as needed. Serve hot with freshly cracked pepper and optional garnishes like parsley or Parmesan.
Notes
Use rotisserie chicken to save time and boost flavor.
If making ahead to freeze, do not add the cream and spinach until reheating.
Adjust thickness by adding extra broth or a splash of milk when reheating.
