Ingredients

500g gnocchi

2 cups tomato passata or crushed tomatoes

200g fresh mozzarella, torn

1/4 cup grated Parmesan cheese

1 small bunch fresh basil leaves

2 tablespoons olive oil

2 garlic cloves, finely chopped (optional)

Salt, to taste

Black pepper, to taste


Instructions

1. Preheat oven to 400°F (200°C).

2. Heat olive oil in an oven-safe skillet over medium heat. Sauté garlic for 30 seconds until fragrant, then add a few basil leaves to infuse the oil.

3. Pour in tomato passata or crushed tomatoes. Season with salt and pepper. Let simmer for 10–15 minutes, stirring occasionally.

4. Stir in uncooked gnocchi, making sure they’re coated well in the sauce. Add a splash of water if needed to loosen the sauce.

5. Tear mozzarella and scatter it over the top. Sprinkle Parmesan evenly. Do not stir.

6. Transfer skillet to the oven and bake for 15–20 minutes, until the cheese is melted and bubbly.

7. Remove from oven, garnish with fresh basil, and drizzle with a little olive oil. Serve hot.

Notes

For extra depth, sauté chopped onions along with the garlic.

Pat the mozzarella dry if it’s too watery to avoid a soggy top.

You can prepare the entire dish ahead and bake it just before serving.
