Ingredients

1 cup unsalted butter, room temperature

1 cup brown sugar, packed

0.5 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2.5 cups all-purpose flour

1 teaspoon baking soda

0.5 teaspoon salt

1.5 cups chocolate chunks

16 soft caramels, chopped

Flaky sea salt, for topping


Instructions

1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.

4. Fold in the chocolate chunks evenly throughout the dough.

5. Cover and chill the dough in the refrigerator for at least 30 minutes.

6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

7. Scoop 2-tablespoon portions of dough onto the sheets, spacing apart. Press caramel pieces into the tops of each dough ball.

8. Bake for 10–12 minutes, until edges are golden and centers are still soft.

9. Remove from the oven and immediately sprinkle with flaky sea salt.

10. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough for 30–60 minutes for a thicker, chewier texture.

Use chopped chocolate bars instead of chips for better melty pockets.

Sprinkle salt right after baking while cookies are still hot for best results.
