Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
0.5 tsp cayenne pepper (optional)
Salt and freshly cracked black pepper, to taste
0.33 cup grated Parmesan cheese
1 tbsp chopped fresh parsley
2 tbsp butter
3 cloves garlic, minced
0.5 cup sun-dried tomatoes, finely chopped
1 tsp Cajun seasoning
1 cup heavy cream
0.5 cup grated Parmesan cheese
Salt and pepper to taste
Red chili flakes (optional)
1 bunch broccolini
1 tbsp olive oil
1 clove garlic, minced
Salt and black pepper, to taste
Lemon zest or juice (optional)
Instructions
1. Pat the chicken dry and toss with olive oil, garlic powder, onion powder, paprika, cayenne, salt, pepper, and Parmesan. Let rest for 10–15 minutes.
2. Heat a skillet over medium-high. Sear the chicken in batches for 3–4 minutes per side until golden and fully cooked. Set aside.
3. In the same pan (or another), add olive oil and broccolini. Sauté until charred and tender-crisp, about 4–5 minutes. Add garlic in the last minute. Season and remove.
4. In a separate pan, melt butter. Add garlic and sun-dried tomatoes; sauté until fragrant.
5. Stir in Cajun seasoning and pour in cream. Simmer gently.
6. Lower the heat and stir in Parmesan. Let the sauce thicken for 3–4 minutes. Season with salt, pepper, and chili flakes.
7. Add the chicken back into the sauce or plate it separately with the sauce drizzled on top.
8. Serve alongside the charred broccolini. Garnish with parsley.
