- 2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 2 tbsp olive oil
- 2 tbsp butter (plus 1 tbsp for the sauce)
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese (plus extra for garnish)
- ½ cup panko breadcrumbs (optional, for extra crunch)
- 8 oz rotini pasta
- 1 cup heavy cream
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
Instructions
- Prepare the Chicken: Pat chicken pieces dry and season with salt, pepper, and 2 tbsp grated Parmesan. Optional: toss with panko breadcrumbs.
- Cook the Chicken: Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Cook chicken bites until golden and cooked through (6–8 minutes). Remove and keep warm.
- Cook the Pasta: Boil rotini in salted water until al dente (8–10 minutes). Reserve ½ cup pasta water. Drain.
- Make the Sauce: In the same skillet, melt 1 tbsp butter. Sauté minced garlic for 30 seconds. Add heavy cream and simmer 5–7 minutes, stirring and scraping up browned bits.
- Finish the Sauce: Stir in remaining Parmesan until melted. Add reserved pasta water as needed for desired sauce consistency.
- Combine: Toss rotini with the creamy sauce. Plate and top with chicken bites.
- Garnish & Serve: Sprinkle with fresh parsley and extra Parmesan. Serve hot and enjoy!
