  • 4 slices of bread (sourdough, rustic white, or your choice)
  • 1 ½ cups cremini or baby bella mushrooms (sliced)
  • 2 tablespoons unsalted butter, plus extra for spreading
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 4 slices of cheese (Gruyère, Swiss, Fontina, or preferred cheese)
  • Salt and freshly ground black pepper (to taste)
  • Fresh herbs (optional—thyme, parsley, or chives for garnish)

Instructions

  1. Sauté the mushrooms: Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add sliced mushrooms in a single layer and cook for 6–8 minutes until golden. Season with salt and pepper. Add garlic and sauté for another 30 seconds to 1 minute. Transfer to a plate.

  2. Assemble the sandwich: Butter one side of each bread slice. On the unbuttered side, layer cheese, then the garlic mushrooms, and top with another layer of cheese. Place the remaining bread on top, buttered side out.

  3. Grill the sandwich: Heat a skillet over medium-low heat. Place the sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.

  4. Serve: Remove from the skillet, let rest for 1 minute, slice, garnish with herbs (if desired), and serve warm.
