For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • 1 tbsp chopped fresh parsley (for garnish)

For the Mashed Potatoes:

  • 2 lbs russet or Yukon gold potatoes, peeled and chopped
  • 1/2 cup whole milk (warm)
  • 1/4 cup heavy cream
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste

For the Roasted Carrots:

  • 56 medium carrots, peeled and cut
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a bowl, combine olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper. Coat chicken breasts and marinate for at least 30 minutes.
  2. Peel and chop potatoes. Boil in salted water until fork-tender (15–20 minutes). Drain and return to the pot.
  3. Preheat oven to 425°F (220°C). Toss carrots with olive oil, garlic powder, salt, pepper, and optional honey. Spread on a baking sheet and roast for 20–25 minutes.
  4. Heat a skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through (165°F internal temp). Let rest.
  5. Mash boiled potatoes with butter, warm milk, and cream. Season with salt and pepper to taste.
  6. Plate mashed potatoes, top with chicken, and serve with roasted carrots. Garnish with fresh parsley if desired.
