For the Chicken:
- 2 boneless, skinless chicken breasts
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp smoked paprika (optional)
- Salt and pepper, to taste
- 1 tbsp chopped fresh parsley (for garnish)
For the Mashed Potatoes:
- 2 lbs russet or Yukon gold potatoes, peeled and chopped
- 1/2 cup whole milk (warm)
- 1/4 cup heavy cream
- 4 tbsp unsalted butter
- Salt and pepper, to taste
For the Roasted Carrots:
- 5–6 medium carrots, peeled and cut
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Chopped parsley for garnish (optional)
Instructions
- In a bowl, combine olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper. Coat chicken breasts and marinate for at least 30 minutes.
- Peel and chop potatoes. Boil in salted water until fork-tender (15–20 minutes). Drain and return to the pot.
- Preheat oven to 425°F (220°C). Toss carrots with olive oil, garlic powder, salt, pepper, and optional honey. Spread on a baking sheet and roast for 20–25 minutes.
- Heat a skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through (165°F internal temp). Let rest.
- Mash boiled potatoes with butter, warm milk, and cream. Season with salt and pepper to taste.
- Plate mashed potatoes, top with chicken, and serve with roasted carrots. Garnish with fresh parsley if desired.
