Garlic Butter Steak Tips with Cheesy Rigatoni

For the Steak Tips:

  • 1 1/2 lbs sirloin steak, cubed
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped (plus more for garnish)

For the Cheesy Rigatoni:

  • 12 oz rigatoni pasta
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups warm whole milk
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • 1/2 cup grated Parmesan
  • Salt and pepper, to taste
  • 1 tsp garlic powder (optional)
  • Dash of crushed red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Season steak tips with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear steak tips in batches, 2–3 minutes per side. Remove and set aside.
  3. Lower heat to medium. Add butter and garlic to the skillet. Sauté for 1 minute. Return steak tips to the pan and toss to coat in garlic butter. Add parsley. Remove from heat.
  4. In a separate saucepan, melt butter and whisk in flour to make a roux. Slowly add warm milk, whisking to avoid lumps. Once thickened, stir in cheeses. Season with salt, pepper, garlic powder, and red pepper flakes (if using).
  5. Combine drained rigatoni with the cheese sauce. Add reserved pasta water as needed for desired consistency.
  6. Plate cheesy rigatoni and top with garlic butter steak tips. Garnish with parsley. Serve immediately.
