Ingredients
1 lb sirloin steak
8 oz rotini pasta
3 tbsp butter
4 cloves garlic, minced
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
2 tbsp chopped fresh parsley
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Bring a large pot of salted water to a boil. Season the steak with salt and pepper.
2. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
3. Heat olive oil in a skillet over medium-high heat and sear steak 3–4 minutes per side.
4. Remove steak from pan and let it rest.
5. Lower heat, add butter and garlic, and sauté until fragrant.
6. Stir in heavy cream and Parmesan cheese and simmer until thickened.
7. Add pasta to the sauce and toss, loosening with pasta water if needed.
8. Slice steak against the grain and serve over pasta, garnished with parsley.
