Ingredients

1 lb sirloin or ribeye steak, cut into 1-inch cubes

1 tsp smoked paprika

1 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp chopped fresh parsley

salt and freshly ground black pepper, to taste

10 oz rotini pasta

2 tbsp unsalted butter

3 cloves garlic, minced

1 cup heavy cream

0.5 cup whole milk

1 cup freshly grated Parmesan cheese

1.5 tsp Cajun seasoning

0.5 tsp smoked paprika

salt and pepper, to taste

1 tbsp chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente. Drain and reserve ½ cup pasta water.

2. Pat steak bites dry and season with salt, pepper, and smoked paprika.

3. Heat a skillet over medium-high heat. Add olive oil and sear steak in batches for 2–3 minutes per side. Set aside.

4. In the same skillet, lower heat and add butter. Sauté garlic until fragrant. Return steak bites and toss in the garlic butter. Garnish with parsley. Remove from heat.

5. In another pan, melt butter for the sauce. Add garlic and sauté briefly.

6. Stir in heavy cream and milk. Add Cajun seasoning, smoked paprika, salt, and pepper. Simmer 2–3 minutes.

7. Reduce heat and whisk in Parmesan until melted. Add a splash of pasta water if needed.

8. Toss in cooked pasta and stir to coat evenly. Garnish with parsley.

9. Serve pasta with garlic butter steak bites piled on top. Enjoy hot.

Notes

Use room temperature steak to ensure even cooking and better sear.

Freshly grated Parmesan melts better than pre-shredded.

If the sauce gets too thick, use pasta water to loosen it up without thinning the flavor.
