Ingredients

1.5 lbs sirloin steak, cut into 1-inch cubes

4 cloves garlic, finely minced

3 tablespoons unsalted butter

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 tablespoon chopped fresh parsley

8 oz shell pasta

1 tablespoon unsalted butter

2 cloves garlic, minced

1 cup heavy cream

0.5 cup freshly grated Parmesan cheese

Salt and pepper, to taste

Pinch of nutmeg or red pepper flakes (optional)


Instructions

1. Cut the steak into cubes, mince garlic, chop parsley, and grate the Parmesan. Boil salted water in a large pot for the pasta.

2. Cook pasta until al dente, then drain and reserve 1/2 cup of pasta water.

3. Heat a skillet with olive oil over medium-high. Sear steak cubes for 1–2 minutes on each side. Do not overcrowd.

4. Reduce heat, add butter and garlic, and toss the steak bites for 1–2 minutes to coat. Garnish with parsley.

5. In a separate pan, melt butter and sauté garlic. Add cream and simmer, then stir in Parmesan until melted and smooth.

6. Season sauce to taste. Stir in cooked pasta, adding pasta water if needed for consistency.

7. Serve pasta on a plate, top with steak bites, and garnish with extra Parmesan and parsley.

Notes

Let the steak come to room temperature before cooking for the best sear.

Use freshly grated Parmesan—it melts better and tastes richer than pre-grated.

For a spicier kick, add red pepper flakes to either the steak or the pasta sauce.
