  • 1 lb sirloin steak, ribeye, or tenderloin, cut into 1-inch cubes
  • 1 lb baby Yukon gold potatoes, halved or quartered
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Optional:

  • A pinch of paprika or red chili flakes (for heat)
  • Lemon wedges for serving

Instructions

  1. Wash and cut the potatoes into even chunks.
  2. Pat steak dry with paper towels and cut into cubes. Season both potatoes and steak with salt and pepper.
  3. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add potatoes cut-side down and cook until crispy and tender, about 10–12 minutes. Remove and set aside.
  4. Add another tablespoon of olive oil to the same pan. Increase heat to medium-high, and sear steak bites in batches, cooking for 2–3 minutes per side until browned.
  5. Reduce heat to medium. Add butter and garlic to the pan with the steak. Stir until butter is melted and garlic is fragrant (about 1 minute).
  6. Return potatoes to the skillet and toss everything together in the garlic butter.
  7. Garnish with fresh parsley and serve hot. Add a squeeze of lemon if desired.
