2 lobster tails (5 to 6 oz each), thawed if frozen

4 tablespoons unsalted butter

3 garlic cloves, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon chopped fresh parsley

Lemon wedges, for serving


Instructions

1. Using kitchen shears, cut down the center of the lobster shell lengthwise, stopping before the tail fin. Pull the meat up and rest it on top of the shell.

2. In a saucepan over medium heat, melt the butter. Add minced garlic and cook until fragrant. Stir in lemon juice, zest, paprika, salt, pepper, and parsley. Remove from heat.

3. Place lobster tails on a foil-lined tray. Brush generously with garlic butter, reserving some for serving.

4. Broil on high, 6–8 inches from heat, for 8–10 minutes until meat is opaque and golden.

5. Drizzle with remaining garlic butter, sprinkle parsley, and serve with lemon wedges.
