- 12 oz rigatoni pasta
- 2 boneless, skinless chicken breasts, cubed
- 4 cloves garlic, minced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni until al dente, then drain and reserve 1/2 cup pasta water.
- Season chicken with salt and pepper. In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat. Add chicken and sear until golden and cooked through, about 6–8 minutes. Remove from skillet.
- In the same skillet, melt remaining butter and add minced garlic. Sauté until fragrant, about 1–2 minutes.
- Pour in heavy cream and simmer gently. Gradually add Parmesan cheese, stirring until melted and smooth. Season with salt and pepper.
- Add cooked rigatoni and seared chicken to the skillet. Toss to coat in the sauce, adding reserved pasta water as needed to loosen.
- Turn off heat, garnish with fresh parsley, and serve hot.
