Ingredients
1 lb chicken breast, cut into bite-sized pieces
3 cloves garlic, minced
2 tbsp butter, divided
1 tbsp olive oil
2 tbsp Cajun seasoning, divided
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 tbsp cream cheese (optional)
1 tsp salt (adjust to taste)
1/2 tsp black pepper
8 oz rotini or fusilli pasta
2 tbsp chopped fresh parsley (for garnish)
Instructions
1. Cut chicken breasts into bite-sized cubes and pat them dry with a paper towel. Season with 1 tablespoon of Cajun seasoning, salt, and pepper.
2. Heat 1 tablespoon butter and olive oil in a large skillet over medium-high heat.
3. Add the chicken in a single layer and sear for 2–3 minutes undisturbed. Stir occasionally until golden and cooked through, about 6–8 minutes total. Remove and set aside.
4. Lower heat to medium. Melt the remaining butter and sauté minced garlic for about 30 seconds.
5. Pour in the heavy cream and stir in the remaining Cajun seasoning. Simmer for 2–3 minutes.
6. Whisk in the Parmesan cheese and cream cheese (if using) until melted and smooth. Simmer 2–3 minutes more until slightly thickened.
7. While sauce simmers, cook pasta in salted water until al dente. Drain.
8. Add cooked pasta to the sauce and toss until fully coated.
9. Add chicken back to the skillet and mix to combine, or serve chicken on top of the pasta.
10. Garnish with chopped parsley and serve hot.
Notes
Use freshly grated Parmesan for the smoothest sauce—pre-shredded cheese may clump.
Don’t overcrowd the skillet when searing chicken; work in batches if needed.
To lighten the spice, reduce Cajun seasoning or use a blend with less cayenne.
