Ingredients
1 can refrigerated biscuit dough
8 pieces mozzarella cheese (cut from sticks or block)
4 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning (optional)
1 pinch red pepper flakes (optional)
Instructions
1. Cut mozzarella into 1-inch chunks or divide string cheese sticks into 4 parts each. Keep chilled.
2. Separate the biscuit dough and flatten each piece into a 3-inch circle.
3. Place one cheese piece in the center of each circle. Fold dough around it and pinch to seal. Roll into a ball.
4. Place seam-side down on a parchment-lined baking sheet.
5. In a small saucepan, melt butter. Add garlic and cook over low heat until fragrant (about 1–2 minutes). Stir in parsley.
6. Brush dough balls generously with garlic butter. Sprinkle with Parmesan and optional seasonings.
7. Bake in a preheated 375°F (190°C) oven for 12–15 minutes, or until golden brown.
8. Brush with remaining garlic butter after baking. Serve warm and melty.
Notes
Keep the cheese cold before stuffing to prevent it from melting too fast while baking.
Seal the dough completely and place seam-side down to avoid cheese leaking out.
For a spicier version, add finely chopped jalapeños or pepper jack cheese inside.
