Description

A fresh and easy broccoli salad loaded with crunchy sunflower seeds, sweet cranberries, crispy bacon, and a creamy dressing. This no-cook side dish is perfect for BBQs, potlucks, or meal prep. It’s quick to make, full of flavor, and stays fresh in the fridge for days!

  • 4 cups fresh broccoli florets (chopped small)
  • 1/4 cup red onion (finely diced)
  • 1/2 cup dried cranberries
  • 1/3 cup sunflower seeds
  • 1/2 cup shredded cheddar cheese
  • 4 slices crispy bacon (crumbled)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or sour cream)
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt & pepper to taste

Instructions

  1. Chop the broccoli into small, bite-sized florets and place them in a large mixing bowl.
  2. Add the diced red onion, dried cranberries, sunflower seeds, shredded cheddar cheese, and crumbled bacon to the bowl.
  3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
  4. Pour the dressing over the broccoli mixture and toss until everything is well coated.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve chilled and enjoy!
