- 2 whole lobsters (about 1½ to 2 pounds each)
- 2 tablespoons unsalted butter
- 2 shallots, finely minced
- 2 cloves garlic, minced
- ½ cup dry white wine
- ½ cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh lemon juice
- ¼ cup grated Gruyère cheese (plus more for topping)
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (plus extra for garnish)
- Salt and freshly ground black pepper, to taste
- Pinch of paprika
- Optional: 1 tablespoon brandy or cognac
Instructions
- Parboil the Lobsters: Bring a large pot of salted water to a boil. Add lobsters and cook for 5–6 minutes until red. Transfer immediately to an ice bath.
- Halve and Clean: Split each lobster lengthwise. Remove meat from tails and claws, chop into bite-sized pieces. Clean shells and set aside.
