Description
Flaky Sweet Almond Pastry is a buttery, golden puff pastry filled with a rich almond paste center and topped with sliced almonds and powdered sugar. Easy to prepare, elegant in presentation, and full of cozy flavor, this pastry is perfect for breakfast, brunch, or dessert.
Ingredients
1 sheet puff pastry, thawed
1/2 cup almond paste
2 tablespoons granulated sugar
1 tablespoon unsalted butter, softened
1 egg yolk
1/4 teaspoon almond extract
1 egg + 1 tablespoon milk (for egg wash)
1/3 cup sliced almonds
Powdered sugar, for dusting
Optional: zest of 1/2 orange or lemon, 1–2 tablespoons apricot jam, pinch of salt
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a medium bowl, mix almond paste, sugar, butter, egg yolk, and almond extract until smooth.
3. Lightly flour your surface and roll out the puff pastry to a 10×12 inch rectangle.
4. Transfer the pastry to the lined baking sheet.
5. Spread the almond filling down the center third, leaving space at the top and bottom.
6. Fold the sides over the filling and seal the edges. Pinch the top and bottom closed.
7. Brush the pastry with the egg and milk wash.
8. Sprinkle sliced almonds over the top and gently press them in.
9. Lightly score the top with a knife for decoration.
10. Bake for 20–25 minutes until golden and puffed.
11. Let cool on a wire rack for 10–15 minutes.
12. Dust with powdered sugar and slice to serve.
Notes
Use almond paste, not marzipan, for balanced sweetness.
For added flavor, include citrus zest or a layer of apricot jam.
Avoid microwaving when reheating to preserve texture.
Best served slightly warm or at room temperature.
