Ingredients
2 boneless skinless chicken thighs
1 tablespoon soy sauce
1 tablespoon sriracha or chili garlic sauce
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon garlic powder
0.5 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon butter
6 cloves garlic finely minced
2 cups chicken broth
1 cup whole milk
0.25 cup heavy cream
1 tablespoon soy sauce
1 teaspoon miso paste
Salt and white pepper to taste
2 packs ramen noodles
1 tablespoon sesame oil
2 tablespoons green onions chopped
1 teaspoon chili oil
Optional: soft-boiled egg, sesame seeds, shredded nori
Instructions
1. In a medium bowl, mix soy sauce, sriracha, honey, sesame oil, garlic powder, smoked paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes.
2. Heat a skillet or grill pan over medium-high heat. Sear chicken for 5–6 minutes per side until fully cooked and charred. Let rest before slicing.
3. In a small pot, melt butter and sauté garlic until fragrant. Add chicken broth and simmer. Pour in milk, cream, soy sauce, and miso paste. Simmer gently for 5–7 minutes. Season to taste.
4. Boil ramen noodles separately according to package instructions. Drain and toss with sesame oil.
5. Assemble bowls by dividing noodles, pouring in broth, and topping with sliced chicken, green onions, and chili oil. Add optional toppings if desired. Serve hot.
Notes
Use miso paste for deeper umami in the broth—just a little goes a long way.
Don’t boil the garlic broth after adding milk or cream, or it may curdle.
Charred chicken adds essential smokiness—cook on high heat without overcrowding the pan.
