Description

These Eggplant Appetizers Roll-ups are a flavorful, elegant starter made by roasting thin slices of eggplant, filling them with a creamy ricotta-herb mixture, and finishing them with a sweet drizzle of honey or pomegranate molasses. Perfect for parties or light bites, they’re as visually stunning as they are delicious.


Ingredients

  • 2 medium globe eggplants
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons grated parmesan cheese
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley or mint
  • 1 tablespoon honey or pomegranate molasses (for drizzling)
  • Fresh berries and mint leaves (optional, for garnish)

Instructions

  1. Slice the eggplants lengthwise into 1/4-inch thick strips. Lay them on a baking sheet, sprinkle with salt, and let sit for 15–20 minutes. Pat dry.
  2. Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil on both sides and roast for 15–20 minutes, flipping halfway through.
  3. In a bowl, mix ricotta, parmesan, garlic, herbs, salt, and pepper until smooth.
  4. Once eggplant slices are cool enough to handle, place a spoonful of filling at one end of each slice and roll tightly.
  5. Arrange roll-ups seam-side down on a platter. Drizzle with honey or molasses. Garnish with berries and mint if desired.
