Ingredients
1 cup heavy whipping cream (cold)
1 cup eggnog (preferably full-fat)
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 tablespoon unflavored gelatin (optional)
2 tablespoons cold water (for blooming gelatin)
1 cup crushed gingersnap cookies or graham crackers
2 tablespoons melted butter
whipped cream, for topping (optional)
Instructions
1. Crush gingersnap cookies or graham crackers using a food processor or rolling pin. Mix with melted butter until combined. Spoon 2 tablespoons into each dessert cup, press lightly, and chill.
2. (Optional) Bloom gelatin in cold water for 5 minutes. Then gently heat to dissolve completely and let cool slightly.
3. In a bowl, whisk eggnog, sugar, vanilla, nutmeg, and cinnamon. If using gelatin, whisk it into the mixture while stirring to prevent clumps.
4. In another bowl, whip the cold heavy cream until stiff peaks form using an electric mixer or whisk.
5. Gently fold the whipped cream into the eggnog mixture in batches using a rubber spatula until fully incorporated.
6. Spoon or pipe mousse over the chilled cookie bases. Tap to level the top. Optionally add whipped cream and a dusting of nutmeg.
7. Chill for at least 2 hours (or longer if using gelatin). Keep refrigerated until ready to serve.
Notes
For a firmer mousse, use gelatin, but it’s optional for a soft and airy texture.
Always chill your heavy cream before whipping—it helps form stiff peaks faster.
Garnish just before serving to keep toppings fresh and visually appealing.
