Ingredients
2 boneless skinless chicken breasts
2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
12 ounces rotini pasta
3 cloves garlic minced
1 1/2 cups heavy cream
1 tablespoon Cajun seasoning
1/2 cup sun-dried tomatoes chopped
1 cup Parmesan cheese grated
Fresh parsley chopped for garnish
Instructions
1. Cut chicken into bite-sized cubes and season with garlic powder, onion powder, smoked paprika, oregano, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–8 minutes until golden and cooked through. Remove and set aside.
3. Boil pasta in salted water until al dente, reserving 1/2 cup pasta water. Drain.
4. In the same skillet, sauté minced garlic for 30 seconds. Add heavy cream, Cajun seasoning, and sun-dried tomatoes. Simmer 3–4 minutes.
5. Stir in Parmesan cheese until melted and smooth. Add pasta water if sauce is too thick.
6. Toss cooked pasta in sauce until coated.
7. Serve pasta with chicken bites on top. Garnish with fresh parsley and extra Parmesan if desired.
Notes
Pat chicken dry before seasoning for better browning.
