Ingredients

Scale

1/4 cup fat (turkey drippings or unsalted butter)

1/4 cup all-purpose flour

2 to 3 cups turkey stock or low-sodium chicken broth

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon onion powder (optional)

1/2 teaspoon garlic powder (optional)

1/2 teaspoon dried thyme or poultry seasoning (optional)

1 to 2 teaspoons Worcestershire sauce (optional)

Instructions

1. If using turkey drippings, pour them into a measuring cup, let the fat separate, and skim off until you have about 1/4 cup. Supplement with butter if needed. If not using drippings, warm the broth to prep.

2. In a medium saucepan over medium heat, melt the fat or butter. Whisk in the flour and cook for 2–3 minutes until golden and nutty-smelling.

3. Gradually whisk in the stock, one cup at a time, stirring constantly to avoid lumps.

4. Let the gravy simmer for 5–7 minutes, stirring often, until it thickens. Add seasonings and taste to adjust.

5. For ultra-smooth texture, strain through a fine mesh strainer into a serving bowl (optional).

6. Serve warm over turkey, potatoes, or stuffing. Stir before serving.

Notes

Whisk constantly when adding stock to avoid lumps.

Use warm broth, not cold, to keep the gravy smooth.

If it thickens too much after cooking, stir in a little warm broth.
