Ingredients

1 lb boneless skinless chicken thighs or breasts

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp honey or brown sugar

2 cloves garlic minced

1 tsp grated fresh ginger

0.5 tsp chili flakes (optional)

0.25 cup mayonnaise

2 tbsp Thai sweet chili sauce

1 tsp sriracha

1 tsp lime juice

0.5 tsp soy sauce

1 pinch salt

2 cups cooked jasmine rice

4 wedges fresh lime

2 tbsp fresh cilantro chopped

Optional extra sweet chili sauce or sriracha


Instructions

1. In a bowl, combine soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and chili flakes. Add the chicken strips and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes.

2. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, soy sauce, and a pinch of salt until smooth. Adjust to taste and refrigerate until ready.

3. Preheat a grill pan or outdoor grill over medium-high heat. Thread marinated chicken onto skewers if using. Grill for 4–5 minutes per side, or until nicely charred and fully cooked. Let rest.

4. Prepare jasmine rice according to package instructions. Fluff and keep warm.

5. Assemble bowls by adding rice, topping with grilled chicken, drizzling sauce, and garnishing with cilantro and lime wedges.

6. Serve immediately, adding more sauce or sriracha if desired.

Notes

Let the chicken rest after grilling to keep it juicy.

Make the sauce in advance and chill—it thickens and tastes even better.

For a vegetarian twist, use tofu or chickpeas in place of chicken.
