Ingredients

Scale

1 1/2 cups warm water (110°F to 115°F)

2 1/4 teaspoons active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon salt

2 tablespoons unsalted butter, melted

1/3 cup baking soda (for boiling)

1 large egg

Coarse sea salt or pretzel salt

Optional for serving:

Cheese dip

Mustard sauce

Garlic butter

Instructions

1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.

2. Add flour, salt, and melted butter. Mix and knead until smooth and elastic.

3. Transfer to a greased bowl, cover, and let rise for 1 hour or until doubled.

4. Divide dough into 4 parts. Roll into ropes and cut into 1-inch pieces.

5. Preheat oven to 425°F. Line baking sheets with parchment paper.

6. Boil 6 cups of water with baking soda. Stir until dissolved.

7. Drop dough bites into boiling water for 20-30 seconds, remove with slotted spoon.

8. Arrange bites on baking sheet, brush with egg wash, and sprinkle with salt.

9. Bake for 12-15 minutes until golden brown.

10. Serve warm with your favorite dipping sauce.

Notes

For a sweet version, skip the salt topping and coat with cinnamon sugar after baking.

Don’t skip the baking soda bath—it gives the bites their signature texture and color.

Letting the dough rest before boiling helps create extra fluffiness.
