1.5 pounds boneless skinless chicken breasts

1 can black beans, drained and rinsed

1 can corn, drained

1 can diced tomatoes with green chiles (10 oz)

2 cups chicken broth

8 ounces cream cheese, cubed

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions

1. Drain and rinse the canned black beans and corn. Add both to the slow cooker.

2. Add the diced tomatoes with green chiles (with juice) and chicken broth. Stir to combine.

3. Nestle the chicken breasts into the mixture.

4. Sprinkle in garlic powder, onion powder, cumin, chili powder, salt, and pepper.

5. Cover and cook on low for 6–7 hours or high for 3–4 hours.

6. Remove the chicken, shred with two forks, and return it to the slow cooker.
